スモークチキンレッグの作り方

先日捌いてきた廃鶏のレッグ8羽分。

つまりは16本その日のうちに、ソミュール液を作って漬け込み、一週間冷蔵庫で熟成させていた。

本当は来る予定はなかったのに、この仕込んだチキンレッグが気になって（あまり長く漬け込んでおくのもよくないかな？とか）、わざわざ島牧まで来てしまった。

お天気も良かったし、土用なことも相まって体に疲れが溜まっていたのかもしれない。チキンレッグは理由の１つでしかなくて、本能的に体がノンストレスな環境を求めていたのだと、きてみて初めて気づいた。

「ちかー！採れたよー！」

庭では去年間引き忘れた人参が顔を出していた。小さいけど優しい甘みと香り。体が緩んでいく。

友人が泊まっていたユースホステルにお邪魔したら、山菜の天ぷらにもありつけた。

春のえぐみは体を開かせる効果と作用がある。「山菜を食べたい！」と感じるのは、今年もよりよく生きるための人間の本能なのだ。

それでもって肝心の燻製だけれど、お陰様で大成功した。子どもたちも「にく〜」「にく〜」とせがむほどの出来栄え。

「少ししょっぱいかな？」と感じるくらいだけど、酒のアテには最高。廃鶏ならではの歯ごたえも、スモークして少しずつ食べるのなら気にならない。むしろ、味わいが増す。

これが、この鳥さんたちだったなんてね。

予定になかったのに、こなければ！と思ったのは、この鶏の命を無駄にしちゃダメだ！という、無意識のエンジンが動いたように思う。

本当に、美味しくいただこうと決意してやった。だから、美味しくなった。おいしさとは、そのくらいシンプルなものなのかもしれない。

《レシピ》

◎チキンレッグ・・・16本
◎水・・・2000cc
◎塩（天然塩）・・・300g
◎砂糖（三温糖）・・・140g
◎スパイス（黒コショウ、クローブの実、セージ、シナモン、ローリエ、ナツメグ）全部で大さじ3ほど
◎にんにく、たまねぎ、セロリの葉の部分 適量

1.水に材料を入れて沸騰させる。沸騰したら弱火で20分ほど。

2.火を止めて冷めるまで待つ。ソミュール液完成。

3.冷めたらソミュール液を濾して、チキンレッグをつけてできるだけ真空にする。（この時にお酒類を入れるとさらに美味しさが増す）

4.冷蔵庫で一週間熟成

5.鍋にお湯をはり、レッグを茹でる（下茹で塩抜き）

6.沸騰しないように弱火（60-70度くらい）を保ち20分（塩分強めだったので、もう少し長くても良かったかもしれない）

7.お湯からあげたら、水分を拭き取って風乾燥30分ほど

8.80-90度ほどの温燻で3時間

9.できあがり！

ネックで取った出汁もおいしかったよ。
