コロナショックで行き場を失った島レモンをお友達と共同購入した。

レモンジャムを作ったり
魚料理や肉料理に添えたりと
このステイホームな日々をいい感じに彩ってくれている

うっかり５キロも頼んでしまったものだから
贅沢に使ってもまだまだ余りある島レモン。
ちょうど島牧村のお隣、瀬棚町の山奥で平飼いの有精卵を作っている森垣さんの卵があったから！これはやってみるか！と、人生初のレモンカード作りをした。

それが、めちゃめちゃ美味しすぎたので
レシピを覚書しておく。

娘が「めっちゃ美味しいーーー！レモンジャムよりこっちが好き！」って言ってくれたから。

大きくなったいつの日か、このレシピを見て作ってくれる日が来たらいいなという
祈りを込めて。

＜レモンカードの作り方＞

【材料】
島レモン　　　　　４つ
平飼い有精卵　　　４つ
砂糖　　　　　　　200g
バター　　　　　　80g
ココナッツオイル　120g

【作り方】
１、レモンを輪切りにしてレモン汁をボールに絞る
２、割った卵をざるで濾して１のボールにいれる
３、砂糖を１のボールに入れる
４、小さめにしたバターとココナッツオイルを１のボールに入れる
５、湯煎用のお湯を鍋に沸かす
６、１のボールを湯煎して、ゴムべらで混ぜる
７、材料が全て溶けて、とろっとしてきたら出来上がり
