年に１度のこの季節がやってきました。
私たちの住む島牧村では、毎年秋になると産卵のため、鮭が戻ってきます。

その鮭を何尾か頂いて１年分の鮭を仕込むのが私たちの秋の恒例行事。

今回はそんな島牧でのリトリート体験を出張して一緒に体験してしまおう！という企画です。福島近郊にお住まいのみなさん、私たちに会いにぜひ遊びにきてくださいね！

鮭って日本人にとってとっても身近だけど
１本まるまる捌いてみたことある人ってなかなかないんじゃないかな。
現に私（講師宍戸慈）も島牧村に住むまではそうでした。
そして、捌きたての国産秋鮭がこんなにもおいしいことも
いくらは自分で漬けるのが一番おいしいことも全く知らずに
30そこそこまできてしまっていました。なんともったいない！
だからこそ、そんな私たちの経験を惜しげもなくシェアする企画です！

身はもちろん、頭や内蔵もあますところなく頂ける。
焼き魚用に冷凍するのはもちろん
鮭トバ、いくらのしょうゆ漬け、
北海道の郷土料理いずしにしてみたりと保存方法もたくさん。

我が家では身も味噌漬けにしたり
醤油麹につけたり、余したところは鮭トバにしたりしています。
自家製のトバやいくらの美味しいことったらありません！
